You're My Butter Half

It's almost Valentines Day! And if you're anything like me & Sam you're thinking "What can I do that is cheap and also involves myself demolishing some sort of delicious food at the end?" Bingo... let me introduce the idea of: Valentines day baking date.

Are we romantic or WHAT.

And seeing as Avocado's are pretty much the sexiest fruit around (yes that's right, it's technically a berry!) We thought we could give you guys a healthy-ish, gluten-free, avocado cake recipe.

Okay, so here we go:

 

 Ingredients

4 avocado's
(yes four, crazy...)

1/2 cup of brown sugar

4 eggs

2/3 cup of stevia

2 cup of gluten free plain flour

1 teaspoon baking powder

2 teaspoon of vanilla extract

1/2 teaspoon salt

 

Instructions

Butter or grease a cake baking tray and leave on ze side. Then preheat your oven to around 350°F or 175°C.

Mash your avocados (this can take FOREVER) as the stones are a pain to get out! Then take a big bowl and combine the mashed avocado, stevia, brown sugar, eggs, and vanilla extract and still until smooth, if it's a bit lumpy it's okay. 

In a smaller bowl, combine the flour, baking powder, and salt. Take the wet avocado mixture and slowly add to this one, until all is mashed together. Pop the mixture into the baking tin and bake in the oven at 350°F or 175°C for around 40 minutes. 

After it's out, let it cool. Take a moment to look at each other lovingly... maybe throw some flour on each other (you know, like they do in the movies whilst giggling horrendously) After that your cake might be cool enough to eat..... then take that romantic piece of cake down!
